Western Omlet Quiche in panIt’s a beautiful Sunday morning and I am working hard to plan my meals for the week. I am on a personal read invention program and I’m working hard at balancing my nutrition. I know that it’s important to have breakfast everyday and I know in order for me to achieve my fitness goals I need to have protein at every meal of the day.I was looking for something quick and easy to make that I could carry with me to work during the weekdays that would provide me with good nutrients and be a filling yet small breakfast. I stumbled across an interesting recipe for Quiche on Pinterest and I thought to myself “I can make that and add a few things to make it my own”. So, this is what I came up with… Western omelette quiche!all you need to make this delicious breakfast are the following ingredients:

1 large muffin baking pan

1 container of Egg Beaters

1 red pepper

1 green onion

2 hand fills of spinach

1/2 cup of baby Bella mushrooms

1 slice of cooked ham (turkey bacon or mock turkey bacon if you don’t eat pork)

Pam Olive Oil Spray

garlic powder

Western Omlet Quiche openFirst, take the ham and brown it in a frying pan evenly on both sides. Remove the ham then set aside. Next, spray the same pan with a little Pam olive oil cooking spray. Make sure the pan is hot then saute the peppers,onions and baby bella mushrooms until they are soft and lightly browned. Now remove the sautee and put it in a bowl. Take the ham and chop it up into small pieces and add it to the bowl of sautéed vegetables. Poor approximately 2 to 2 1/2 half cups of egg beaters into the ham and vegetable mixture. Stir the mixture and add a few dashes of garlic powder. once your mixture is ready lightly spray the muffin pans with Pam olive oil spray. Heat your oven to 350 degrees. Pour the egg mixture into the pan three-quarters of the way full. Place the pan into the oven for approximately 25 minutes or until the center is done. Check your Quiche with a fork by poking it in the center to see if it’s cooked all the way through. Once your Quiche is finished serve with your favorite sides or fruit and enjoy a compact yet filling breakfast. – Tiffany Bacon
